The event takes place on Wednesday evening (May 16) as the UK’s first zero waste restaurant presents a Charles Heidsieck Champagne-pairing masterclass and sustainable tasting menu prepared by award-winning experimental chef, Douglas McMaster.

It’s set to be immersive evening which combines luxury and sustainability and will feature Charles Heidsieck’s Champagnes enjoying non-vintages, vintages, rose and the latest blanc de blancs, hosted by Charles Heidsieck executive director Stephen Leroux and an interactive lesson on how to create seasoned, hand-blended butters for your table

The six-course, waste-free menu will be sourced and foraged from the downs and shores of Brighton, prepared by McMaster and paired with Charles Heidsieck Champagnes.

There will also be a selection of hand-seasoned butters and Silo’s famous sourdough bread to take home with you from the popular and stylish restaurant in Upper Gardner Street

The event is part of Maverick Encounters from Charles Heidsieck is an exclusive series of experiences celebrating exciting pioneers, entrepreneurs and artisans, inspired by the House’s maverick founder, ‘Champagne Charlie’.
